Potato Pericana

Ingredients:
4 irish potatoes (cut in rounds)
1 large carrot (cut in rounds)
¼ Onion (finely chopped)
1 Tablespoon chopped Parsley
Salt and Pepper
1 Tablespoon Vegetable oil

Directions:
Boil the potatoes and carrots in salt water till  they're done. Don't overcook. Strain from water And set aside.

Add the oil to a skillet, add the parsley, onions, salt and pepper and sauté for 30 seconds. Add the cooked potatoes and carrots. Sauté for 1 minute and remove from heat.

Serve with any side you desire. I served with a piece of baked chicken and stewed peppers.

  2. seriously chichi,never had a name for this meal but i cook it because i try to be creative with food ..lol, I add more veggies tho. now i know its pericana..lol

    1. As far as I know, itz called parsley in Nigeria too. You probably won't get it in the regular market. Check shoprite, spar, park n shop etc. Where do u stay? So I can direct u better where to find.

  4. some hausa men who sell veggies have parsely.check legend supermarket,theres a veggie stall tehre, and one other one in kado,if you live in Abuja
