Coconut Rice



Coconut rice is my all time favorite. Normally I would use real coconuts for this recipe but I don't like the stress involved in extracting coconut cream. These days I have found a good substitute to cut out all that hard labor. You can use a can of coconut milk or powdered coconut but if you would rather use the normal coconut then you would need two coconuts for this recipe. Also, I have seen people cook coconut rice plain (without tomatoes) and with crayfish. I don't like my food looking pale so I add some color with tomatoes and I personally don't like using crayfish to cook rice. Whatever recipe works for you is great though but here is how I like mine...

Ingredients:
4 cups of rice
1kg Chicken or Turkey
Tomatoes
Pepper
Onions
2 Sachets Coconut Powder
Knorr Cubes
Salt
Curry
Garlic
Ginger


Directions:
Parboil the rice and set aside.

Spice the chicken/turkey with knorr, salt, curry, garlic and ginger. Blend some onions and pepper and add to the pot.


Cook till the meat is done and then strain from the stock. Bake the meat till it's browned or fry if you wish.

Blend the tomatoes, pepper and onions and put in a large pot.


Boil till the water dries out and then add a spoon of oil used to fry the chicken. Fry to tomatoes for about 3-5 minutes.


Add the meat stock and the coconut powder and bring to a boil. If it looks like you don't have enough stock for the rice, add a little water. Adjust seasoning if necessary.

After it's boiled, add the parboiled rice and turn the heat up to the highest till it starts boiling.


As soon as it starts boiling, turn the heat to the very lowest and let it slow cook till the water in the rice dries out completely. Check the rice from time to time. If it's still hard then add some water. If you notice there's water settled on top but the bottom is drying out, make small holes in the rice with a fork to allow the water get to the bottom of the pot.

Serve with the meat and coleslaw or any other vegetables.

  1. Thank Chi-Chi, i will definitely try it as soon as i can get my hands on a normal coconut, though you didn't indicate how those of us who cant readily get our hands on "already made coconut powder" should extract the milk.

  2. Hmmm Chi chi would really love to try this, buh dunno where to get coconut powder from here. And am sure no other substitutes.

    U have been doing a great job...When I run out of cooking ideas, I come here for a guide.

    1. Hello Kay, if you can't find the powder then look for the canned coconut milk. That one is everywhere. Otherwise just extract the milk fro normal coconut and use.

    Nice job you are doing: sorry to burst your bubbles but I want to help the 1st anon. out:

    TO EXTRACT COCONUT MILK
    1. There are 2 ways to go about it: either you blend the coconut flesh with a blender or grate them.
    2a. USING A BLENDER: cut the coconut flesh into tiny pieces, put into the blender, add sufficient water and blend.
    2b. Use a sieve to separate the milk from the crushed flesh. Keep sieving till there's no more flesh residue.
    3. USING A GRATER: use your grater to crush the coconut flesh; add water to the grated flesh and sieve to get the milk.

    Some prefer to add slightly hot/warm water to the flesh; for me, room temperature water will do.

    1. Hello there...if you're in Nigeria then the powder is easy to come by. Just ask them in d market for Emma Coconut Powder...otherwise u can buy the canned milk which is readily available almost everywhere too.

  6. Coconut powder is everywhere o. I've never extracted frm fresh coconut. Ts in many stores in naija. Except then u r outside the country.

  7. Chichi, when you say 4 cups of rice, do you mean derica cups or milk cups? I'm cooking it and it seems the sauce is too much, kind of.

    1. Hello Fati, I'm not sure coconut juice would work. It's too light for this and you would barely taste it. Get canned coconut milk or the powder.

  9. its nice but I prefer, cream coconut rice, intact the local one but with cook butter to give it that cream color.

  10. First I wanna say Chichi you are the best. I followed the coconut rice instruction to a T and I must say I feel really proud of myself. My hubby enjoyed it so much he didn't leave a single grain of rice and my 2yr old did it justice too.

    2. Thanks chichi for this recipe, I would also try this method. Some people used to add browning in order to get brown color. Is it a nice ideal?
