Fish and Vegetables


I always wondered how I could survive without meat. Now I know I can...thanks to my friend Yosra who is a pescetarian. She visited me yesterday and I had no idea what to serve her since all I had was meat based. Well, I somehow whipped up something "fishy" for her and I'm glad she loved it. Best of all is that it was really easy to make and VERY HEALTHY yet so tasty. So I'm glad to share this recipe with everyone…Here it goes!

Ingredients:
Fish of any kind (I used tilapia fillet)
1 Large Idaho Potato (Irish Potato)
Some broccoli
Cauliflower
Baby Carrots
Green Peppers
A dash of curry
A dash of garlic
A dash of crushed pepper
A dash of vegetable oil
Salt to taste.
Pls ignore the cinnamon spice…don't know how it made it to the pic. lol.

Directions:
Skin the potatoes and cut into thin slices. Wash and combine all the ingredients (except the fish) in a mixing bowl and mix well. Season the fish (like you did the vegetables) in a different bowl then lay everything out on a foil-lined baking pan and bake.

I'm not big on fish but this was such a hit i think i love fish now. Haha.

    1. Hi dear, it is actually very easy to make…and YES, you can use any spice you want and you can use any vegetables you want…and of course you can also use any fish you choose.

  5. If you don't have an oven, you can use a frying pan to sautée the vegetables and you can also fry the fish with a lil oil.
